Middle Eastern Roasted Vegetables

























If you like warm, earthy spices and you like vegetables, you must try this recipe. It has become one of our favorites. Yum!!!

1 tsp ground cumin
1 tsp ground coriander
1/2 tsp chili powder
1/2 tsp sweet paprika
1/2 tsp (or more, as desired) ground cinnamon
1/4 tsp ground allspice
1/4 tsp ginger
1/8 tsp cayenne pepper
Pinch ground clove
1 tsp unrefined cane sugar
8 cups vegetables, cut into bite-sized chunks


In a small bowl, combine all spices. Place vegetables in large bowl. Add spice blend and thoroughly coat vegetables. 

Roast veggies at 400° for about an hour in a large baking dish with sides. Stir occasionally to make sure vegetables do not burn. 

Note: We used this spice blend with baked chicken, and it did not taste very good. But the spice blend gives roasted vegetables a wonderful flavor.
