Calabazas con Queso


When we were in Fresno, California a couple of years ago, we met Reuben, a man who God miraculously delivered from methamphetamine addiction while we were there. His parents invited us to their home for dinner and she showed me how to make this wonderful dish. They served it with homemade refried beans and tortillas.

“Calabazas con Queso” means “Zucchini with Cheese” in Spanish. It is amazing that something so delicious can also be so easy to make.



1/2 onion, chopped
1 tomato, chopped
4-5 zucchini, chopped
1 can of corn (I use fresh or frozen corn.)
Garlic powder
Salt, to taste
Diced jalapeno, if desired
Grated Monterey Jack cheese

Place all ingredients, except cheese, in large pan. Cover and steam over medium-high heat for about 15 minutes. Put cheese on top of vegetables and cook until cheese is melted.
