Note: Kale can be used instead of zucchini. It is a tossup as to which is more delicious: Kale chips or zucchini chips!
Marinade
Ingredients:
4 T fresh squeezed lemon juice
2-1/2 T extra virgin olive oil
1/4 tsp cayenne pepper
2-1/2 T extra virgin olive oil
1/4 tsp cayenne pepper
1/2
tsp salt
1/2
tsp sweet paprika
1/2 tsp dried basil
1/2 tsp dried oregano
2-1/2 tsp garlic powder
2-1/2 tsp onion powder
3 zucchini
1/2 tsp dried basil
1/2 tsp dried oregano
2-1/2 tsp garlic powder
2-1/2 tsp onion powder
3 zucchini
Use
a mandoline to slice the zucchini very thin or use a thin, sharp knife to slice
the zucchini as thin as you possibly can. Set zucchini aside.
In
a large bowl, combine marinade ingredients. Add sliced zucchini and toss
zucchini in the marinade. Lay zucchini slices on dehydrator trays in a single
layer.
I found this recipe online and - of course! - tweaked it a bit. The only thing wrong with these chips is that no matter how many you make, they will disappear in a hurry. Enjoy!
