Coconut Oat Cookies

These cookies are a healthier version of the classic oatmeal cookie recipe. They are easy to make. Try to use as many organic ingredients as possible.

       1 egg
   3/4 cup butter, softened
       1 tsp vanilla
1-1/2 cups whole-wheat flour
   3/4 cup coconut sugar
   1/4 tsp baking soda
   1/2 tsp ground cinnamon
       1 tsp baking powder
1/4 cup grated unsweetened dried coconut flakes
       2 cups rolled oats
   1/2 cup chopped walnuts
       1 cup semisweet chocolate chips

Preheat oven to 375ยบ.

In a medium bowl, beat together egg, butter, and vanilla. Stir in whole-wheat flour, coconut sugar, baking soda, cinnamon, and baking powder. Add coconut flakes, oats, walnuts and chocolate chips; combine.

Drop by rounded teaspoon onto ungreased cookie sheet. Bake for about 10 minutes. Allow to cool on cookie sheet for a couple of minutes, before transferring to a wire rack.

Makes 48 cookies.

Note: If you are not a chocolate person, these cookies will probably taste great with the chocolate chips omitted.
