Lemon-mint drinks are
popular here in our area of the Middle East. They are a bit expensive to buy at
restaurants, so Bill and I decided to see if we could make our own. Turns out
they are easy to make. I think most folks over here use sugar to make this
drink, but we opted for honey instead.
We had to buy a little
blender. It costs only 13JD (about $20.00). It is on the low end of the low-end
blenders, but with a little effort we are able to git-‘er-done, as Bill likes
to say.
Many of you are
probably not too interested in an icy drink right now, if you live in a
cold-weather climate. But this recipe is definitely worth storing away for
those warm summer days that are sure to come! It is healthy, refreshing and
energizing. You will enjoy its delicious, sweet-tart flavor.
1/2 cup freshly squeezed lemon juice
1 cup fresh mint leaves
1/3 cup honey
12 ice cubes
2 cups water
Place all ingredients in blender and combine. Pulse ice if
necessary. The drink should have a frothy and somewhat slushy consistency.
Makes 4 1-cup servings
